Vinification Harvested very early in the morning to benefit from the cooler morning air. Protection of the grapes and juice from the aeration as to avoid any oxodation. Pneumatic pressure, cold settling and slow fermentation (18°C) in a stainless steel vat.
Tasting Notes Bright, with quinine, honeysuckle, white peach and green almond flavors that race through a lively, straw-tinged finish. - JM
